Tofu Wraps with Maple & Sriracha Mayo


• 1 Tbsp vegetable oil

• 200 g tofu, grated

• 1-2 carrots, grated

• 4 Tbsp tomato paste

• 1 Tsp paprika

• 1 Tsp cumin

• 2 cloves garlic, pressed

• Salt and pepper


For the sauce:

• 1 Tbsp maple spread

• 2 Tbsp mayonnaise

• 2 Tbsp plain yogurt

• 1 Tbsp sriracha sauce

• 1 Tbsp lemon juice

• 1 clove garlic, pressed


Additionally:


• Lettuce and cucumber sticks

• Tortillas


Heat a pan, add the oil, and heat it up. Add all the ingredients for the tofu and sauté for 5-6 minutes. Mix the ingredients for the sauce. Assemble the tortillas with the cooked mixture, sauce, lettuce, and cucumber sticks.
