Maple marinated aubergines


- 2 tbsp maple syrup

- 1 tbsp olive oil

- 2 tbsp soy sauce

- 1 garlic clove, crushed

- 4 aubergines


Mix all the ingredients including the garlic. Wash and cut aubergines in half, slice flesh about 1 cm deep. Brush with marinade. Marinate covered for at least 15 minutes.


Place face down on a baking sheet lined with parment paper, cover with foil and bake for 30 minutes at 200°C. Remove foil, turn over and continue baking for 10-15 minutes.
