100g Maple sugar
1 egg white
1 pinch of salt
175g ground almonds
2 teaspoons cinnamon
35g finely sifted maple sugar
0.5 tablespoon lemon juice
Whisk the egg white with the salt until stiff peaks form. Fold in the maple sugar. Mix the almonds and cinnamon, then add them to the mixture, combining to form a dough. Add a little water if necessary.
Roll out the dough to approximately 1 cm thickness betwen two parchment paper sheets. Cut out stars, regularly dipping the cookie cutter in sugar. Place the cookies on baking sheets lined with parchment paper. Let them dry for about 6 hours or overnight at room temperature.
Preheat the oven to 240°C.
Bake for approximately 3-5 minutes in the middle of the oven. Remove and let the cinnamon stars cool on a rack.
Mix maple sugar and lemon juice to obtain a thick glaze. Spread a little glaze on the stars using a teaspoon and let them dry.
