- 120 gr Mawoo maple sugar
- 2 ripe bananas
- 120 g flour
- 0.5 teaspoon baking powder
- 0.5 teaspoon baking soda
- 1 pinch of salt
- 40 g pecan nuts
- 40 g butter
- 1 egg
- 100 ml buttermilk (1 tablespoon lemon juice + 95ml milk, stir and let it set for 10 minutes)
Preheat the oven at 180°C. Mix the flour, baking soda, baking powder and salt. Add the chopped pecan nuts. In the mixer, whip the butter and the sugar until well blended. Add the egg and continue whipping until the mixture becomes foamy. Add the buttermilk and mix again.
Smash the bananas with a fork, add in the mixture and whip again. Gradually add the dry ingredients until fully incorporated. Grease a cake mould with butter or line with baking paper and fill with the batter.
Bake the cake for 50 minutes in the oven, after this time stick a pick or a knife into it to check if the Banana Bread is ready, if they still come out a bit wet, bake it for another 5 minutes.
Leave it to cool 15 minutes before unmoulding it.
