250 g fresh brown mushrooms, feel free to use other mushrooms
3 tbsp olive oil
1 white onion, thinly sliced
3 cloves garlic, minced
2 tbsp balsamic vinegar
1 tsp fresh or dried rosemary, roughly chopped
1 tbsp maple syrup, adjust according to desired sweetness
Salt and pepper
Cut the mushrooms in half. Heat olive oil in a non-stick skillet. Add the onions and sauté over medium heat until tender, for 4 to 5 minutes.
Add the garlic and sauté for an additional 2 minutes. Add the mushrooms. Cook over medium heat for 4 to 5 minutes, stirring occasionally. Add balsamic vinegar and rosemary. Let it cook for another 5 to 6 minutes. Once the mushrooms are cooked, add the maple syrup and mix well.
Season with salt and pepper. Drizzle with a little more olive oil, if desired. Enjoy as a side dish, on toasted bread, with salads, or as is!
